Tonight's Supper - Steak and potatoe Soup

just big enough for one person to eat. Jim has a leftover soup he'll be enjoying.

Steak and Potato Soup

1 Tbsp Beef soup bouillon, powder



5 oz Beef, Roast Beef, Deli



1/4 cup Celery



1 Tbsp Cornstarch



1 ea Garlic, clove



1 6oz can Mushrooms, canned



1/4 cup Onions



1/4 tsp Pepper, black



5 oz Potatoes, red



4 cup Water



1/2 cup Water



1/2 cup Water 0 0 0L





TOTAL CALORIES: 509

Makes 4-1/2 cups
(Each whole cups is 113 Calories)


Preparation Instructions:
cut roast into bite-size cubes. Add all ingredients except for cornstarch and 1/2 c water. 1/2 hour before serving mix cornstarch and water, add to crockpot on high and stir in well.

Recipe - Cheesy Tuna Casserole

1 & 1/4 cup Cheddar Cheese Soup, condensed



1/2 cup Cheese, cheddar, 2%, shredded



1/2 cup Mushrooms, Stems & Pieces, Canned



1 tsp Mustard, Prepared



8 oz Noodles, Egg



1 ea Onions



2/3 cup Peas, green, frozen



1/8 tsp Pepper, black



1/2 tsp Salt



1 cup Sour Cream



3 6oz can Tuna, in Water, canned





TOTAL CALORIES: 2,538

Preparation Instructions:
Cook noodles. Drain and set aside. Chop onion. Combine soup, mushrooms, onion, mustard, peas, salt, and sour cream in a bowl. Gently stir in noodles and drained tuna. Pour into 2 quart casserole dish. Bake for 20 minutes. Sprinkle cheddar cheese on top, and bake for remaining 15 minutes.

Special notes:
  • 1.25 cups condensed cheese soup = 1 can of campbell's soup
  • 1/2 c. mushrooms = 1 can of sliced mushrooms (actually a wee bit more but not enough to matter)
  • we mix the cheese right into the recipe instead of scattering on top
  • also if you forget to put in the pepper as I often do....sprinkling pepper over the top of the casserole works well too. :)
  • 18 oz of tuna is what this recipe calls for... there are 4.2 oz of tuna in one regular can of tuna so it takes 4 cans of tuna to actually make this recipe.

Last Nights Supper

After having a few meals with pasta in them, I thought a change was in order, besides...we got meat on sale today...which means we ate for about $2 each tonight. :)

This recipe made by me using formulazone.

Beef, potatoes, and applesauce

Cook Time: 150 minutes
Cook Temp: 300 degrees

1 & 1/8 cup Applesauce, Unsweetened



9 & 1/8 oz Beef, loin, bottom sirloin butt, tri-tip roast



13 & 1/2 oz Potatoes, red













Preparation Instructions:
cook beef as desired, do the same for the potatoes. :)

I did a 300 oven, for 2.5 hours with a wee bit onion seasoning and dutch meat seasoning, and then boiled the potatoes.



Our meal was a nice size, simple and tasted good. Jim was pleased with how I prepared it as well.

AND we have enough meat left that if Jim wants this for supper tonight, we just have to cook up 2 more small/medium potatoes and it's all ready for him.

Jim is pleased...thus far he has lost 16 pounds by sticking to the diet. Me, well, I'm eating healthier and once I stop eating the remaining house junk food, should start losing weight as well. :)

Recipes Made Today

Chicken Meatloaf and Potatoes

I designed this recipe, based on one I found on-line that just sounded interesting.

1/2 cup Carrots



3 & 1/4 Tbsp Catsup



1/4 tsp Celery seed



7/8 lb Chicken, ground



1 ea Egg, white



3/4 ea Garlic, clove



1/2 cup Oat bran



3/4 sm Onions



1/8 tsp Pepper, black



5/8 lb Potatoes, red



7/8 tsp Salt



7/8 tsp Worcestershire Sauce













Preparation Instructions:
One has a choice....either have potatoes on the side (and then cook as desired). OR cut into cubes, boil until done, mash them up and add to the meatloaf mixture. Combine chicken and oat bran in large bowl.Set aside. Cut the carrot& onion into chunks and add to blender. Add the remaining 7 ingredients to the blender. (NOT the potato) Process in blender until carrot is very fine. Pour blender mixture over meat mixture. Mix very well using your hands. Form mixture into a loaf and place in lightly greased 9" X 13" pan. Cover with foil and bake for one hour. Remove foil & continue baking for 15-30 minutes, until loaf is cooked through.

UPDATE: Jim found they had a bit too much carrot in them, so I'll be tweaking the recipe at some point. I liked it as it was, but I'll tweak it to make it better for my hubby.

Sweet Cornbread Muffins

1/2 cup Corn, sweet, yellow, frozen



1/2 cup Cornmeal, whole-grain, yellow



2 ea Egg, Whole, Large



1 & 1/2 cup Flour, All-Purpose



2/3 cup Fructose



1 & 1/4 cup Milk, nonfat



1/3 cup Oil, vegetable, canola



8 scoop Protein Powder



1 tsp Salt













Preparation Instructions:
Line 32 mini-muffin cups. (You may make the cornbread in a 9x13 pan sprayed with cooking spray instead and increase baking time 2 or 3 minutes.) Melt butter. Combine all ingredients. Stir until blended. Pour batter into muffin cups and fill not quite to top of the paper. Bake 15 minutes, or until toothpick inserted in center comes out clean. Cool in pans on wire ricks for 5 minutes; remove to wire racks to cool slightly. Serve warm. Leftovers freeze well.

Jim really likes these. They reheat easily too.

Hamburg and Potato

Tonight's supper for me was hamburg and potato.

7 & 1/8 oz Beef, ground, 95% lean



7/8 cup Carrots



1 10oz cn Cream of mushroom soup, canned, condensed



2 & 5/8 med Potatoes, red





Preparation Instructions:
brown ground beef. dice potatoes, cook them up and then add to ground beef. fry until nicely browned. Mix in soup. heat through. either cook carrots and mix them in or have raw on side.

This recipe made using Formulazone. Mind you, this was a double recipe, I made a single sized portion for myself. It wasn't bad, wasn't great. Not something Jim would have been keen on.

Jim had the extras from Sunday nights dinner.
Justin did "apple and carrot dip". he still refuses meat and potato.

Recipe: Tomato Beef

I used formulazone to make this recipe.

3/8 Tbsp Basil, dried



1/2 lb Beef, flank



2 & 1/2 Tbsp Cheese, low fat, cheddar or colby



5/8 10oz cn Mushrooms, canned



2 & 3/4 oz Noodles, Elbow Macaroni



3/8 med Onions



2/3 cup Peas, green, frozen



3/8 10oz cn Tomato soup, canned, condensed





season meat as desired with salt and pepper. cube beef into bitesized pieces. brown through in frying pan on stove (or however you wish to cook it).

Prepare pasta as per package directions.
Dice onions, add to browning beef, add mushrooms, heat through.

Then add cooked pasta and peas, add the soup and mix thoroughly.
add a good tsp of basil/oregano or some other spice that works well with tomato and pasta,
let simmer for about 15 minutes or so. Add cheese about 5 minutes before serving and voila, one nice sunday night dinner that took about 40 minutes from start to finish.

Toddlers can help with this! :)

Tonight's Supper - Beef, corn and potatoes

Beef, Corn and Potatoes - my own recipe

6 oz Beef, Roast Beef, Deli



1 Tbsp Butter



3/4 cup Corn, white



1 med Potatoes, red













Preparation Instructions:
cook corn to desired tenderness, add butter.

heat roast beef (we used leftover roast beef) through (cut into chunks and put in fry pan). Scramble fry with pre-cooked potatoes if desired.

Recipe: Strawberry Pancakes

Strawberry Pancakes

2/3 cup Cottage Cheese



11 ea Egg Whites



5 & 1/2 Tbsp Flour, Wheat, whole-grain



2 & 3/4 tsp Oil, olive



7/8 cup Strawberries



2 & 3/4 tsp Vanilla extract



2 & 3/4 Tbsp Wheat germ, toasted, plain










TOTAL CALORIES: 711

Makes 12 pancakes
(Each whole pancakes is 59 Calories)


Preparation Instructions:
Whip egg whites and vanilla until fluffy. Add flour and wheat germ. Fold in cottage cheese. Blend all ingredients until smooth. Spread olive oil on a non-stick griggle and heat. Pour batter onto griddle (If making recipe as enterer, this will make 4 pancakes ) and cook over medium heat. Put strawberries in microwave safe bowl and heat on high for 1 minute in microwave. Stir and pour over pancakes and enjoy!

I made a substitution... 1 oz of oat bran instead of wheat germ. I used what I had on hand, and this was a balanced substitute (they have a very handy substitution thing). AND I added splenda to the strawberries. Next time I'll blend the strawberries into a puree before serving.

This recipe was well-received. :) YEAH!!!!!!!!!!! Makes a big breakfast for two people.
