Strawberry Pancakes

5 & 1/2 | Tbsp | Flour, Wheat, whole-grain | ||||

7/8 | cup | Strawberries | ||||
2 & 3/4 | tsp | Vanilla extract | ||||
2 & 3/4 | Tbsp | Wheat germ, toasted, plain | ||||
TOTAL CALORIES: 711 Makes 12 pancakes(Each whole pancakes is 59 Calories) | ||||||
Preparation Instructions: Whip egg whites and vanilla until fluffy. Add flour and wheat germ. Fold in cottage cheese. Blend all ingredients until smooth. Spread olive oil on a non-stick griggle and heat. Pour batter onto griddle (If making recipe as enterer, this will make 4 pancakes ) and cook over medium heat. Put strawberries in microwave safe bowl and heat on high for 1 minute in microwave. Stir and pour over pancakes and enjoy! |

I made a substitution... 1 oz of oat bran instead of wheat germ. I used what I had on hand, and this was a balanced substitute (they have a very handy substitution thing). AND I added splenda to the strawberries. Next time I'll blend the strawberries into a puree before serving.
This recipe was well-received. :) YEAH!!!!!!!!!!! Makes a big breakfast for two people.
